At the end of the 1990s, Rafael and José Guilisasti were very visionary in perceiving that the market was beginning to change, and global consumers were beginning to consciously choose the products they were consuming, not just in terms of their health, but also due to its environmental and social effects.

Carménère is a red wine grape variety that is originally from Bordeaux, France. It was widely planted in the Médoc region but it's believed that the variety has been all but extinct in France since the phylloxera epidemic of the late 19th century. Today it is mainly grown in Chile, where it has become one of the country's signature grape varieties.
The grape produce wine that are deeply colored and have a rich, complex flavor profile, with notes of dark fruit, such as blackberry and plum, as well as a distinct green bell pepper or herbaceousness, which gives the wine a unique character. They can also have a smoky or chocolate character when aged in oak. They tend to be medium to full-bodied, with moderate acidity and moderate to high tannins. It pairs well with red meats and flavorful, spicy dishes.
