Pais wines

Pais, also known as "Mission" is a red wine grape variety that is grown primarily in Chile, where it has a long history dating back to the 16th century when it was brought to Chile by Spanish priests as they traveled through South America. It was widely planted and used to make wine, but as other grape varieties such as Cabernet Sauvignon and Merlot have gained popularity, it has largely been replaced. However, in recent years there has been a resurgence of interest in Pais and is being grown again by some winemakers.

Pais wines are known for their rustic character, high alcohol content and tannins. The grape produces wine that is typically deep red in color, with flavors of dark fruit, such as blackberry, black cherry, and plum, as well as earthy and spicy notes. Wines made from Pais are typically low in acidity, making them a good wine for those who may find red wines with high acidity to be too tart.

Pais wines pair well with hearty and flavorful dishes, such as grilled meats and strong cheeses.
